Squash Apple Cheddar Gratin


2 C sliced onion
1 tsp fresh thyme leaves (½ tsp dried)
2 T vegetable oil
2½ C thinly sliced apple
2 T bread crumbs
3 C cooked mashed squash*

Preheat oven to 350° . Gently saute onions and thyme in oil until soft. Toss sliced apple with flour and in a separate bowl the cheese and bread crumbs. Oil an 8 x 8 x 3 casserole dish and layer ingredients: squash, salt and pepper, sauteed onions, apple slices, salt and pepper and cheddar, bread crumb mixture. Bake covered for 30 min and uncovered for 15 min.

(*Squash is easier to peel if cooked first and allowed to cool.)
