Athenian String Beans


several cloves garlic
4-5 T olive oil
2 lb green beans
2½ lb tomatos, sliced
salt and pepper
grated Parmesan cheese

Peel garlic cloves. In a large pan, lightly saute in olive oil. Do not brown. Add beans, then tomatoes on top. Add fresh grated-pepper. Cover and cook slowly for 1 ½ hours (or until tender). Add cheese during last 10 min .
