Baked Beets

Servings:

8 beets (about 2 lb)
3 T unsalted butter
2 tsp raspberry vinegar
finely grated zest of 1 orange
1 tsp caraway seeds
salt and black pepper
1 tsp snipped fresh chives

Preheat oven, to 350°. Trim beets, leaving one-inch stem. Rinse but don't peel. Place beets in baking pan and fill with 1/• C water. Cover with aluminum foil. bake 1 hour. Remove foil, bake another 30 min. Peel and slice to ¼-inch thick. Melt butter in skillet. Add beets and all ingredients except chives. Heat. Put in serving bowl. Sprinkle with chives.
