Dutch Apple Pudding


3-4 apples, pared, cored, and diced
2 eggs
½ to 1C Honey
3 T whole wheat flour
1T soy (or whole wheat) flour
2 tsp baking powder
½ tsp salt
1 C nuts, chopped
I tsp cinnamon
dash nutmeg

Beat eggs; beat in honey. Stir in apples and rest of ingredients. Pour into a greased 9-inch pie plate. Bake at 350 ° for about 25 min, until brown and crusty. Serve with yogurt, sour cream, whipped cream, or ice cream.
